Barchef: bringing molecular mixology to T.O.

When you mention the word “molecular” to anyone in the food world, you get two immediate associations.  The first being “Molecular Gastronomy” and the second being “El Bulli”, which is a restaurant in Spain known for such culinary practices.

Toronto hasn’t quite made a name for itself by way of such practices, though it does have its share of establishments using it.  Enter Barchef, an establishment located on Queen St. between Spadina and Bathurst which has taken on the task of introducing “Molecular Mixology” to Toronto.  Though labeled a “restaurant”, one might argue it to be a “cocktail lounge”, as the food does take a back seat to their carefully planned cocktails.

In a city serious about their food, I’m certain the “Molecular Mixology” movement will pickup soon as Torontonians are as adventurous as any city.  If you’re in the area this is definitely a “good eat”, or should I say “good sip” to check out.

Barchef Aaron, carefully putting together a concoction.

Mojito: Havana 7yr, palm sugar, mint, fresh lime, mojito ravioli, lime vanilla air.

The most unconventional cocktail ever.  Though very tasty.

Barchef Rocket: Smirnoff Rasberry, curacao, fresh lime, lemoncello, pomegranate aril & effervescent citric sugar rim.

Definitely a must have!

Lavender Cosmo: fresh muddled cranberry, lavender vodka, Navan, fresh lime, lavender essence, lavender, cranberry & sugar rim.

Tuna Tartar

Sauteed Shrimp

Beef Carpacio

Seared Duck Breast

Liver Pate

Desert Tasting

We dined here with a couple of friends in the industry, Richard (Oliver & Bonacini) & Joanna (GBC).
