Latenight Snack: Courvoisier Infused Strawberry Compote on Vanilla Icecream
Everynight between 12am to 2am I get a latenight craving for something savory. For some reason, tonight I had the craving for something alittle sweet. I looked into my fridge and realized that I still had some market fresh strawberries lying around. Besides the fact that eating strawberries by themself is just plain boring, I also had a brand new bucket of ice cream that would be the perfect compliment to a nice strawberry compote. And to make things even juicier, a left over bottle of Courvoisier would enhance the compote’s flavour while allowing the creation to double as a great night cap.






So here are the ingredients that you need (from top left to right) 1. Fresh Strawberries 2. Brown Sugar 3. Unsalted Butter 4. Vanilla Ice Cream & 5. the “most” important ingredient: Courvoisier.

You start by cutting up the strawberries into slices.

Then you put a pan on medium heat and throw unsalted butter in.

Once butter melts, throw in the strawberries and brown sugar. Cook til strawberries begin to get soft.

“IMPORTANT”: Now drizzle in about half an ounce of Courvoisier and allow alcohol to cook out. If you want more of the cognac flavour, don’t cook out as much.

Scoop vanilla ice cream into a bowl and spoon the warm compote over it.
